Ugba and Okro Soup recipe is a soup that once you have a taste, you would always want to make. This soup is also called Ofe Ugba in Igbo dialect.

Hello friends, trust you and family are doing great today? Ugba and Okro soup is what I’m sharing with you today.

This is a delicious soup made with Okro and Ugba also known as oil bean. It’s a Healthy Nigerian soup mostly prepared, loved and enjoyed by the Eastern in Nigeria.

There are different method of making Ugba and Okro Soup. Any Protein of choice can be used.

There are good number of Nigerian Soup you can make with Okro such as Okro soup with ugu, ogbono Soup with Okro, Okro soup with uziza leaves to mention but a few.

I enjoyed Ugba and Okro Soup so much when my grandmother was alive, trust grandma delicacy.

Like I said above, there are different ways of preparing this soup and my grandma’s method was she pounded the Okro with mortar.

You can also cut the Okro without pounding which was the method I used.

I introduced my children to this soup and lately it’s their favorite. They love the Ugba in it and the flavor it gives.

Anytime I’m preparing Okro soup, my children will be like, mummy,hope there’s Ugba in it? LOL! That is to tell you how much they love the soup.

To Make Ugba and Okro Soup Recipe

Ugba and okro soup

 

Ingredients

  • 200g okro
  • 150g Ugba or oil bean
  • 2 medium dry cat fish
  • 300g kpomo or cowskin
  • 200g beef
  • 1/2 cup crayfish
  • Pepper to taste
  • 3 medium stock fish ear
  • 200g offal/ roundabout
  • 2 cooking spoons palm oil
  • 2 handfuls shredded ugu leaves
  • Salt to taste
